Healthy dinner recipe: Chicken & Pesto Bake!

I absolutely love to make dinner recipes that helps our clients in save time, and to build up a repertoire of easy, go-to recipes for when they’re stuck. Most of our clients are so busy with many commitments, and want recipes that are really easy to cook.

This chicken & pesto bake is so easy, because all you need is pesto, chicken and tomato! You can then literally throw it in the oven and get the house back in order while it cooks!  Eat it with a really healthy salad, some vegetables or a baked potato, and voila, a perfect, easy dinner that won’t take up any time.

 

I made a complete turn around in my health and fitness, many years ago. I went from smoking and drinking too much, and comfort eating, to a healthy, happy lifestyle that I love.

When you’re making the change, and your exercising regularly, and cutting out the crap, make sure that you’re also fuelling your body, with good healthy food. Having a snack between meals is very good for you too.

Sometimes I find that it can take a while for the old you to catch up with the new you, and you’ll feel like your living as two people for a while. The healthy, clean living during the week, and the old you, that still over-eats and drinks too much at the weekend.

For me, I feel like I’m beginning to come to the person I was always meant to be. It’s taken me an extremely long time to not binge with stuff at weekends, and I’m still taking it one weekend at a time. Dependency on alcohol is rife in this country, and I used to roll my eyes when I’d read that we need to address it. But maybe, on an individual level, we need to ask ourselves why we need so much escapism. What are we running away from?

Why is it that I’d be so healthy during the week and then get absolutely hammered on a Saturday night. It’s so normalised in this country that it can be so difficult to see the strangeness of it all. Why aren’t we happy with who we are sober? Anyway, I’m off on a tangent, but it’s been on my mind for a long time, and I wanted to share with you my thoughts. I’d love to hear your thoughts on this.
